Everybody loves eating. I mean, we have to eat food. So why not be good at it?
I make it no secret that I love cooking as much as I love eating. I remember early last year, I had this ‘cook-fever’ and shared a few recipes in my old blog. Ima now do it again.
Mayo Shrimp Paste
*this is not an original recipe I created, it’s just modified according to my experience and taste.*
This goes well with toasted bread and tea! A perfect breakfast or tea-time.
What You need:
- 400g shrimp. (de-shell-ed and de-veined)
- Mayonnaise
- Half a lemon
- 2 eggs. (hard-boiled)
- fresh basil. (finely chopped) and if you want an extra kick, fresh parsley(optional)
- 125g butter
- Half an onion (finely chopped)
Here we go:
- Get out a pan (duh) and heat 2 tbsp butter over moderate heat until it melts. You wouldn’t want burnt buttter. Add in your shrimps, and season it with salt and pepper to taste. 2 minutes.
- Transfer your shrimps to a food precessor/blender. Leave the leftover butter and stuff in the pan. DO NOT CLEAN.
- Now, add the onions into the pan with another 1 tbsp of butter over LOW heat. Stir about 2 to 3 minutes.
- Scrape onions into the processor and blend it all up.
- Allow mixture to cool to room temperature. About 10 minutes.
- Now, pour your mixture into a bowl and add mayonnaise. It’s up to you how much you like mayo. Add a bit more pepper and throw in the finely chopped basil. Squeeze in lemon juice.
- Stir.
- Mash your eggs (lol) and add them to the already stirred mixture. This is important. Eggs go in LAST.
- Put into fridge to chill.
There, you’re done. Goes extremely well with thick toast with a bit of salad in it.
